Summer’s coming and it’s overcast and rainy today – what could be better than some fresh popped popcorn with a twist of lime and cilantro? As of 9pm, absolutely nothing.
Put the lid on and heat the oil up using a single kernel to know when we’re ready.
After the single kernel has popped, pour some more in and re-cover (don’t cover more than the bottom of your pot or you’ll be overflowing).
Chop up some cilantro, dice your lime in half (I only used half for this bowl) and grab some salt.
About five minutes later –
When all your popcorn’s been popped (the popping’ll slow down so just guess), pour it out, sprinkle some salt, squeeze some lime and finish with your cilantro on top and shake. (Oh, then eat).
